4 different ways to cook sausages

We’re as passionate about how to cook sausages as we are about making them. As third generation butchers, we know all the tips and tricks to achieve a perfectly cooked sausage – whatever your preferred cooking method. Our top tip across the board: don’t be a pricker. Read on to find out why.

1 | BBQing and Grilling

The passing of the BBQ tongs is an Australian rite of passage. With great heat, comes great responsibility. If you don’t want to botch the barbie and split the sausages, make sure you:

Remove sausages from the fridge 30 minutes before cooking. You’ll be rewarded with a shorter cooking time and more evenly cooked-through sausages.

Avoid charring by using a lower, radiant heat rather than a direct flame.

Use a dash of low flavoured oil (think vegetable, canola or avocado) with Pork and Cumberland sausages, as they create less fat than other varieties.

To keep the flavour in, don’t prick your sausages. Every hole is an escape route for all those delicious juices to flow out from – and on one wants that.

2 | Oven Baking

Don’t just save our sausages for the barbie. Oven baking is the easy, convenient way to enjoy them year-round. As a bonus, if you cook sausages with other ingredients in a tray bake or casserole, you’ll infuse the dish with all those juicy, mouth-watering flavours.

Lay your sausages in a baking tray or dish, making sure they aren’t touching.

Bake at 180 degrees for 20 minutes, turning the sausages after 10 minutes.

And remember, don’t be a pricker. Oh yes, it wasn’t just for the BBQ. Let’s keep those beautiful flavours in.

3 | Pan Frying

A favourite method for a hearty full breakfast in the morning. The delicious aromas from pan-frying will have the whole family gravitating towards the kitchen.

Using a low-flavoured oil and over a medium heat, cook the sausages low and slow.

Nestle together and turn the sausages often.

For thin sausages,15 minutes should be enough. Thicker sausages will take 20-30 minutes.

Don’t be a pricker. Yes, that old chestnut once again. We like flavourful sausages, what can we say?

4 | Air Frying

It is the new kid on the block and quickly becoming many people’s go-to. Quick, clean and delicious, it will have you… walking on air (oh dear, that was a shocker, wasn’t it?)

Set your air fryer to 190 degrees.

Cook for 8-10 minutes, turning the sausages half-way through.

Don’t be a pricker. Once more for good measure. But we figure you have the idea by now.
