Bacon and Egg Breakfast Cups


  • British Unsmoked Back Bacon
  • 30 baby spinach leaves
  • 8 eggs
  • Pepper
  • Oil


  1. Preheat oven to 180°C.
  2. Grease muffin tin with oil.
  3. Line each hole in the tray with a bacon rasher around the edge.
  4. In a bowl beat together eggs. Add pepper.
  5. Place 2-3 spinach leaves at the bottom of each hole.
  6. Pour in eggs, making sure you leave 1cm of space on top so it doesn’t overflow.
  7. Bake in oven for 20 minutes.
