Thin Beef Sausage, Spinach and Tomato Frittata


  • 6 Classic British Sausage Co. Beef Eater Sausages (cut into approx 5cm chunks)
  • 1 tablespoon olive oil
  • Red onion, cut into thin wedges
  • 1 garlic clove, crushed or thinly sliced
  • 1 cup cherry tomatoes
  • 2 cups spinach leaves
  • 1 tablespoon basil leaves, torn
  • 6 eggs, beaten
  • 2 tablespoons Parmesan cheese (optional)
  • Salt and pepper


  1. Heat oven to 180°C.
  2. In an oven proof pan or ceramic quiche dish, place the cut sausages, red onion, garlic and cherry tomatoes, drizzle with olive oil, sprinkle with a pinch of salt and cracked black pepper.
  3. Cook in oven for 10-15 minutes, until almost cooked through and sausages are turning golden.
  4. Remove from the oven and scatter over the spinach, basil and cheese, then pour in the beaten eggs.
  5. Return to the oven for 10 minutes until golden and almost set.
