Crispy Potato Rosti Nests

The perfect sidekick to a proper breakfast.

Ingredients

  • 1 large potato, peeled
  • ½ teaspoon salt
  • 1 teaspoon oil

Method

  1. Grate the potato. Using the coarse side of a grater, grate potato into a bowl.
  2. Salt and rest. Sprinkle over the salt and toss through. Leave for 5 to 10 minutes. The salt will help draw out the excess moisture.
  3. Squeeze well. Place the grated potato into a paper towel or clean tea towel and squeeze firmly over the sink until as much liquid as possible has been removed
  4. Shape your nests. Add the olive oil and mix through. Divide into two portions and shape into loose nests or patties.
  5. Place into the air fryer and cook at 180C for 10 to 12 minutes, turning once halfway if needed, until crisp and golden.
