2. Most bacon made in Australia uses imported pork.

What happens to all that imported pork? Much of it is used to make bacon. So, while some bacon brands can claim to be Australian made, the reality is many of them use imported pork. Just like with all pork products, the only way to ensure that what you’re buying has been raised and made here is to look for the Country of Origin statement or the Australian Pork logo.

3. Imported Pork is precooked before export.

Another good way to recognise bacon that use Australian Pork is to see if it is raw, as imported pork must be precooked to meet government regulations. Precooked bacon is pale pink in colour and has a rubbery texture compared to fresh, raw Australian bacon. Choose raw and you’re on to a winner winner, breakfast or dinner.

4. Using Australian Pork allows raw curing which enhances the flavour.

Raw curing is the best way to ensure you get a satisfying meaty bite in your bacon. By keeping the pork raw and not cooked, it allows the natural sweetness of the pork and the traditional cure time to mature. What you’re left with is fresh, flavourful bacon.
