Bacon‑Wrapped Carrots with Butter & Honey Glaze

Sweet, salty and perfectly caramelised, these bacon-wrapped carrots make an easy show-stopping side.

Ingredients

  • 8 rashers or 1 pack of British Streaky Bacon
  • 16 small carrots, peeled and trimmed (bunch of baby carrots)
  • 1 tbsp butter, melted
  • 1 tsp honey

Method

  1. Bring a saucepan of salted water to the boil.
  2. Add the carrots and par-cook until just tender. Drain well and allow to steam dry.
  3. Cut each bacon rasher lengthways to create 16 long strips.
  4. Wrap one strip of bacon around each carrot and place seam-side down on a lined baking tray.
  5. Combine the melted butter and honey, then brush over the carrots.
  6. Bake in a preheated oven at 200°C (fan 180°C) for 15 minutes.
  7. Remove from the oven and baste again with the remaining glaze.
  8. Place under a hot grill for a further 5 minutes, or until the bacon is crisp and glossy.
  9. Serve immediately.
