King-Sized Posh Sausage Roll

Ingredients

  • 1 onion, finely diced
  • 4 rashers of British Sausage Ham & Bacon Co Traditional Smoked Streaky Bacon, diced
  • 6 British Sausage Co Pork & Apple Sausages
  • 375g all-butter puff pastry (rolled to approx. 25cm x 50cm wide) or use two thawed puff pastry sheets joined together
  • Egg, beaten (for pastry)

Method

  1. Preheat oven to 220°C (200°C fan-forced).
  2. Heat oil in a frying pan over medium heat. Add the onion and bacon. Cook until the onion is soft, and the bacon is nicely browned. Set aside to cool slightly.
  3. Remove the skins from the sausages and place the sausage meat into a large bowl.
  4. Add the cooled onion and bacon mixture to the sausage meat and mix well to combine.
  5. Lay out the puff pastry on a clean surface. Spoon the sausage mixture in a long, even line down the centre of the pastry.
  6. Fold the pastry over the filling to enclose, pressing the edges together to seal. Use a fork to crimp the seam if desired.
  7. Place seam-side up (for a rustic look) on a lined baking tray. Brush the top with a beaten egg. Then, using a sharp knife, make a few diagonal slits across the top to allow steam to escape during baking.
  8. Bake for 30–35 minutes or until the pastry is golden and puffed, and the filling is cooked through.
  9. Rest for 5 minutes before slicing. Serve warm or at room temperature.
