Bacon, Cheese & Chive Scone

So light, flakey and easy to make. Perfect for morning or an afternoon tea.

Ingredients

  • 8 rashers (175g) British Smoked Streaky or Back Bacon, diced and well-cooked
  • 2 1/2 cups (300g) plain flour
  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 6 tbsp (85g) cold unsalted butter, diced
  • 1 cup grated cheddar or tasty cheese
  • 2 tbsp finely chopped fresh chives (or spring onion)
  • 3/4 cup (180ml) full cream milk

Method

  1. Preheat your oven to 200°C (180°C fan). Line a baking tray with baking paper.
  2. In a large mixing bowl, combine flour, baking powder, sugar, salt and pepper. Give it a quick stir or whisk through to ensure dry ingredients are mixed together thoroughly.
  3. Add the diced butter and rub into the flour using your fingertips until it resembles coarse breadcrumbs.
  4. Mix in cooked bacon, grated cheese and chopped chives until ingredients are evenly distributed.
  5. Add in the milk and gently mix through until a dough forms. Do not overwork it.
  6. Tip the dough onto a lightly floured surface. Pat it into a circle about 3cm thick. Transfer onto the lined baking tray, then cut dough into 8 wedges. Brush the scones with a little milk.
  7. Bake in the oven and bake for 20-25 minutes, or until golden brown on top and cooked through.
  8. When cooked, let slightly cool, then pull apart and enjoy. Best served with a side of pickles and a good dollop of relish or chutney. Don’t forget the cuppa!
