Ingredients
- 200g British Sausage Ham & Bacon Co Traditional Back Bacon, finely diced
- 1 cup of panko breadcrumbs
- 1 garlic clove, crushed
- Rind of 1 lemon, finely grated
- 1 tablespoon chopped parsley
- 2 tablespoons of olive oil
- Salt, pepper
Method
- Using a large fry pan, heat 1 tablespoon of the olive oil and slowly cook the finely diced bacon until crispy, approximately 7 minutes.
- Add the crushed garlic, breadcrumbs and the remaining olive oil to the pan and mix through with the bacon. Gently toast all ingredients together for approximately 2 mins or until breadcrumbs become slightly golden.
- Next, add in the finely grated lemon rind, parsley and mix through.
- Season to your liking with salt and pepper, then top away.
