Bubble & Squeak Festive Edition celebrates the best of Christmas leftovers – think roast veggies, carrots, beans, Brussel sprouts, shredded turkey, and then add some black pudding and bacon – reimagined into something comforting, clever, and just as festive. Whether it’s Boxing Day brunch or an evening supper, it’s a delicious way to keep the holiday spirit going.

And remember there are no rules.

Simply use your choice of favourite leftovers.

We’ve tried the lot and they all work …just make sure you use one starchy ingredient like potatoes. You can mash them together to make them into patties or alternatively go free flow like us and fry all up in the pan.

Then to elevate our roasted veggies we’ve added some of our Black Pudding and then topped it all with our crispy, traditionally cured 100% Australian Bacon and a fried egg.

Here’s our method for a one pan meal.

Ingredients

  • 4 rashers British Smoked Streaky or Back Bacon
  • 4 slices (2cms thick) of British Sausage. Co. Black Pudding
  • 2 cups of roasted and steamed vegetables of your choice
  • 1 cup of shredded turkey
  • 2 eggs
  • 2 teaspoons oil or butter
  • Salt and pepper to taste

Method

  1. Using a large fry pan, melt butter or heat oil in a medium hot pan and cook the bacon and black pudding slices for approximately 3 minutes each side until cooked and crispy on the outside. Once cooked, transfer to a tray and keep warm in a low to moderate heated oven.
  2. Using the same fry pan (complete with the left-over oil and juices from the cooking of the bacon and black pudding) add your vegetables, shredded turkey and stir fry in pan for 5 mins or until hot. It is here you will hear the “bubble and squeaking” of the ingredients.
  3. Once the vegetables are heated through transfer onto two serving plates. Next, break the cooked black pudding slices into bite size pieces and place strategically amongst the bubble and squeaks. Finally cook your egg to your liking and then add the vegetables to the egg and bacon.
