One Pan Pea & Bacon Orzo

Big flavour, one pan, under 30 minutes. This One Pan Pea & Bacon Orzo is a quick and easy weeknight favourite.

FUN FACT – Orzo may look like rice but it’s pasta at heart. The perfect shortcut that gives creamy comforting results without the risotto-level effort.

Ingredients

  • 1 pack of British Smoked Streaky or Back Bacon, diced
  • 250g orzo pasta
  • 2 cups chicken or vegetable stock
  • 1 cup frozen peas
  • 1 small brown onion, finely diced
  • 2 gloves garlic, finely chopped
  • 1 tbsp olive oil
  • ½ cup cream
  • ½ cup grated Parmesan plus extra to serve
  • ½ tsp chilli flakes (optional, for a little heat)
  • Zest of 1 lemon (optional, for a little fresh zing)
  • Salt and pepper for seasoning

Method

  1. Crisp the bacon: Heat the olive oil in a deep frypan over medium heat. Add the bacon and cook for 5-7 minutes until golden.
  2. Soften the base: Add the onion and cook for a further 3 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
  3. Cook the Orzo: Stir in the orzo. Then add the stock and bring to a gentle simmer. Reduce the heat and cook for 8 to 20 minutes, stirring occasionally until the orzo is tender and most of the liquid has been absorbed.
  4. Add peas and cream: Stir through the peas and cream and cook for a further 2 to 3 minutes until the orzo is creamy and glossy.
  5. Finish & Serve Stir through the Parmesan and season well with salt and pepper. If opting for a little zesty flavour, add the lemon zest and stir through. Serve immediately and top with extra Parmesan. Serve with more grated cheese and some chilli if your partial to some heat!
